Description
To enable learners to identify the origins of liquid and solid wastes in the
food industry, and outline the management strategies required to minimise their
generation and impact on the environment.

Range of Variables
This module is suitable for on or off-the-job delivery. It is essential that
all learning outcomes be closely related to workplace practice, irrespective of
the mode of delivery.
Wherever possible, learners should visit a wide range of food processing
industries, land fill, recycling, and/or water treatment facilities. In
locations where this is difficult, videos, photographs, slides, case studies
and visiting speakers should be used instead.
For full-time learners, the module should be scheduled over a minimum of nine
weeks to enable the linking of learning to other food streams and modules
dealing with quality assurance. For on-the-job delivery, it is essential that
learners gain skills relevant to a range of food processing operations (ie.
case studies and contexts should not focus exclusively on the provider
organisation’s products and interests).
