Description
To provide the learner with the knowledge and skills to monitor materials
acquisition and the processing, preservation, packaging and storage of
commodities in the food industry.

Range of Variables
This package represents a module cluster which should be integrated for
assessment purposes. The total duration of 100 hours may be considered too long
for one module. For more efficient delivery, providers may choose to structure
their delivery around particular units of operation or types of commodities
with strong local relevance. In this way, smaller module blocks could be
packaged to suit local, or enterprise, needs. However, in doing so it is
essential that learners are presented with an integrated view of commercial
operations rather than an atomised approach to unit operations.
The module(s) could be delivered on or off-the-job. The necessity for learners
to have access to pilot plant equipment suggests an integrated mix of delivery
modes (especially where the provider does not have these facilities).
For full-time learners, the module should be scheduled over a minimum of nine
weeks to ensure
