Description
This unit describes the skills and knowledge required to sort carcases according to workplace or customer specifications.This unit applies to individuals who work under general supervision to sort carcases in meat processing premises.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.

1. Prepare for sorting to specification
- 1.1 Identify customer specifications and workplace requirements for sorting carcases
- 1.2 Identify workplace health and safety requirements for task, including personal protective equipment
2. Identify carcases
- 2.1 Select and sort carcases following workplace requirements and customer specifications
- 2.2 Identify potential sources of contamination and cross-contamination
- 2.3 Identify contaminated carcases and take corrective action
- 2.4 Identify the escape methods from chiller if locked in
3. Identify carcase details
- 3.1 Handle carcases following workplace requirements
- 3.2 Sort carcases following workplace requirements, customer specifications and regulatory requirements
